Coppa or Capocollo is the top shoulder of pork from the North of Italy. This traditional salumi tends to marble, it has intense flavour and length and is an exceptional addition to a salumi board. Made with love in the mountain village of Fie, Alto Adige, 30miles from Bolzano by a family whom dedicated their life to produce to an incredible quality.
