Anchovy fillets or filetti di acciugha are hand filleted and preserved in oil. Made by a family run producer in Calabria, South of Italy. Laura and her husband transform small batches of hand selected fish, caught a few miles from Vibo Valentzia. The fillets are much bigger and meatier than the industrial one.
